Abstract

In the modern and economically developed countries, factors such as uncertainty, lack of trust or risk are currently mediating in relation to eating. This paper deals with the features of those mediations in the context of food consumption: especially, the tension between a prevailing presence of risk and, at the same time, a trust that could be generally accepted in the field, while it becomes the necessary framework for its constant renewal through new products in the market. To do so, the analysis will focus on the situations in which the tension seems to be bigger like the moments of crises. It will also depart from the explaining capacity of those categories, in order to describe and explain the processes of recuperation of trust by the consumers after the food crises.
