Gentrificación alimentaria: concepto a debate y reflexiones desde la literatura

Resumen

A pesar del auge en la conceptualización y uso del concepto de gentrificación alimentaria, y ante la complejidad de las dinámicas propias de la alimentación en los territorios urbanos, se considera necesaria una reflexión sobre la concomitancia ontológica entre la alimentación y la gentrificación. Por lo tanto, el objetivo de este artículo es analizar las discusiones teóricas entretejidas alrededor de la conceptualización de la gentrificación alimentaria desde una técnica de revisión sistemática de la literatura. Se concluye que la literatura alrededor de la gentrificación alimentaria ha trascendido a los estudios urbanos, articulándose con la foodificación y la gourmetización. Esto es novedoso ya que presenta un mapeo de la teorización de la gentrificación alimentaria, cuya mirada panorámica se da sobre un constructo en emergencia.
